Recently, I attended a work-related convention in Las Vegas, and this brought me to Famous Dave's Legendary BBQ restaurant for some BBQ. I broght some friends, and we all were fortunate enough to try Dave's grub. Brisket, ribs, cornbread, cole slaw. Oh man, was I ever stuffed when we left! One of those sides has been on my mind ever since.
I just got home last night, and I already whipped up a batch of my version of "Famous Dave's cheesy Mac & Cheese"! Naturally, the first I did was wield the Power of teh Googlez! And I found a couple of recipes that sounded OK, but I wasn't Crazy-Go-Nuts about either. I ended up borrowing from both, and adding my own spin on them. The end result was something that was rich and cheesy, as well as having a hearty crunch and a bit of heat to each bite. I loved it!
The ingredients were all things I had in the house, and it took about an hour to prep, and 30 - 45 minutes to heat up. I boiled some macaroni till al dente and set aside. In a food processor, I mixed some evaporated milk, cream, powdered mustard, ancho, smoked paprika and some chopped fresh jalapenos. Mixed it all up, mixed in some cheeses and topped with Panko and fried onion pieces, as well as more cheese, of course. Baked it till it was warm and used the broiler to crisp up the Panko.
The recipe that I added already has been modified to reflect some feedback and reflections. The next time I make this, it will be perfect!
