Next up was the Crossborder Blues, Brews and Q's in Wilson, NY. A very popular event that is hosted at a brewery and organized by two competitors.
The event lived up to its reputation. We had great neighbours, perfect weather and ran a really solid cook. The brisket was SO good, that I sliced it a little thick, thinking the judges would appreciate the confidence I was showing in my product. Unfortunately, I learned that judges equate thick slices to overdone brisket (visually) and I think that actually hurt my scores.
Nonetheless we had some solid calls and a great time!
