Smoked to the Bone - 2011

Back in Ottawa, of our 2nd season, and this was our first Proefessional competition. The team had a new member in Mike Hynes, whom Paul and I worked with when we spent a week together as the kitchen crew for a local BBQ TV show called "Grill This, Smoke That". Mike, Paul and I all bonded instantly and we cooked at our first competition together at Smoked to the Bone.

This time, Ottawa's Royal Lepage Team Realty sponsored us and provided us with a van to use! We were very grateful.

And it was only the 2nd time we'd ever cooked a brisket! We had some technical challenges with a cooker that didn't help, but we learned an awful lot!

Ultimately, we bombed in Brisket. 2nd last. Ribs and Pork weren't much better. Clearly, we were going to have to up our game when playing in The Big Leagues! Fortunately, we did get one call: 1st Place Chicken! That was pretty exciting and the cash helped recoup all our costs for the event. We were quite happy for our friends who got calls, including the Pistol Packin Piggies, who took 1st Place Ribs and Amberwood BBQ, who were GCs!

The experience was immeasurable, and we were ready for our next comp. It would be in Ottawa, and it would just happen to be for a close friend of the President of the United States.
