Bacon-wrapped wings

Ingredients

12  
chicken wings, split
1 tablespoon
Some olive oil
1 tablespoon
Chipotle chicken rub
6 slice
bacon (1/2 slice per wing)

Instructions

1. Put wings in a large mixing bowl
2. add oil, toss wings to coat
3. add a moderate amount of rub
4. wrap each wing in half a strip of bacon
5. Place wings on a wire rack
6. Smoke over apple/hickory at 225 for one hour
7. Increase temp to 300 for another 45 minutes - an hour, till bacon is irresistible

Notes

* Having the bacon at room temperature makes it easy to wrap
* There is no reason why you couldn't do this in the oven or in a different kind of BBQ.
