Ingredients
1 package
black turtle beans ( Approx 2 cups if you buy in bulk) 1⁄2
chicken or turkey or pork broth (half fill large slow cooker) 2
carrots (large - diced) 2
cloves garlic, minced 1
onion finely diced (large onion) 1 pound
cooked ham (cubed) (can go up to 2 lbs if you have a lot of left over ham) 3
bay leaves 1
hot pepper 1 cup
green sweet peas (chopped)Instructions
Soak beans overnight; drain water then cover again with water in stock pot
Add broth (chicken/turkey, beef or pork) 1/2 of the volume of the stock pot/slow cooker
Mix rest of ingredients into pot, except the green peas.
Simmer on low heat/setting until liquid reduced by half (usually 24 to 36 hours on low in my slow cooker) Time will vary by cooker used.
About 10 minutes before serving, add fresh sweet peas.
Serve over brown rice or couscous.
