Ingredients

1  
roasted or smoked chicken (pulled apart)
1  
sweet green pepper, large (cut into strips)
1  
red bell pepper, large (cut into strips)
1  
yellow onion, large (cut into strips)
4 tablespoon
chicken fajita seasoning (Recipe on this site.)
1⁄3 cup
water
1 tablespoon
olive oil
3 clove
garlic (3 to 4 cloves)
1  
pkg Dempster's original Tortillas
1 cup
Salsa
1 cup
guacamole
1 cup
Sour cream
1 cup
shredded spiced cheese (Recipe on this site.)
   
favorite hot sauce (optional)

Instructions

Pour olive oil into skillet on medium heat.
Using a garlic press or flat of large knife, mince garlic and add to oil.
Add chicken pieces, and stir using a spatula.
When chicken is heated and coated in oil, add onion, green and red pepper (approx 7 minutes).
Once vegetables are softened add Chicken Fajita Seasoning then pour water over mixture, stirring occasionally.
Using the spatula, scoop mixture onto Tortillas, add guacamole, salsa, cheese, sour cream, and hot sauce, then serve.

Notes

Whenever I barbecue or roast up a chicken dinner on the weekend, I always make two birds since having leftover chicken is a great thing for feeding starving Capers during the week. This recipe is a great way to feed people without a whole lot of work.
