Ingredients
2 pound
ground wild game (deer, moose, goose). (Meat must be as lean as possible, remove any remaining fat on meat.) 2 tablespoon
Garlic powder 2 tablespoon
black pepper (2 to 3 T) 1 tablespoon
onion salt 2 teaspoon
canning or pickling salt 1⁄2 tablespoon
ground mustardInstructions
Grind meat.
Mix ingredients thoroughly in a non plastic bowl.
Since this is jerky made from ground up meats place in jerky gun and make large strips. Make your strips directly on dehydrator rack or smoker rack. Make sure you leave some space between strips of meat.
Place in smoker at 175 for roughly 9 hours or in dehydrator for about 8. Taste to desired texture.
