Ingredients
1 cup
Pancake batter (Instant is fine!) 1 can
Pam 1⁄4 cup
crumbled sausage (http://www.eatapedia.com/recipes/sage_and_savoury_breakfast_sausage is PERFECT!)Instructions
Spray each mini muffin tin with non-stick spray
Pour 1/2 T batter into each mold. (I fill 2, 1 T at a time)
Add the crumbled sausage, maybe a teaspoon
Top with another 1/2 T of batter
Bake at 350 in the oven or BBQ (indirect heat!) for 10 - 15 minutes, till they lift out easily.
Notes
Other fillings can be used, be creative! I have used a few blueberries, or a slice of banana.
Some chocolate chips would work.
I pout maple syrup over the tops, and sprinkle with icing sugar just before serving.
