Pulled Pork Fried Rice

Ingredients

4 cup
cooked rice (4 or 5 c)
2 cup
pre-smoked meat (pulled pork is especially nice), chopped
5  
eggs, beaten
5  
green onions
1⁄2 cup
baby peas, frozen
5 tablespoon
olive oil
5 tablespoon
soy sauce

Instructions

In a wok, get the oil very hot...just about smoking.
Add the eggs and chop/mix in the oil quickly.
Once the eggs are cooked, add the rice and fry them both up.
Add the meat and continue to fry it all.
Once it's hot and obviously fried, add the soy sauce, and mix it all up. Fry for another couple of minutes.
Add the onions and peas, and mix it all up.
Serve hot and eat right away!

Notes

Leftover Bacon triads make for a nice meat in this rice, but my favourite is pulled pork.
I now use all kinds of stuff in this, as it has evolved. Now I use celery, onions, sprouts, broccoli, anything in the fridge really!
