Ingredients
1 tablespoon
olive oil 2 clove
garlic, minced 1⁄2 cup
minced onion 1 cup
tomato puree 2⁄3 cup
honey 1⁄2 cup
water 1⁄4 cup
bourbon (I use 1/2 cup) 3 tablespoon
cider vinegar 1 tablespoon
Tony Chachere's More Spice seasoning 2 teaspoon
tabasco sauce 1 teaspoon
dry mustard 1 teaspoon
kosher or sea salt 1⁄2 teaspoon
jalapeno pepper powderInstructions
Heat oil in saucepan over medium heat. Add garlic and onion, saute until onions are transparent, about 5 minutes.
Add remainder of ingredients, reduce heat to medium-low and simmer, stirring occasionally, for 30 minutes to let flavors blend.
I tend to leave it on the Keep Warm burner for several hours, stirring every so often. This sauce becomes better the longer it simmers.
Substitute apple juice or half and half apple juice and water for the 1/2 cup of water.
Sauce like this one often work with vegetarian dishes as well.
