Stuffed Pork Tenderloin

Ingredients

Pork Tender Loin
1⁄2 cup
sundried tomato
4 clove
garlic
1 tablespoon
Thomson's pork rub
1⁄2 cup
Fresh Basil choped
1 teaspoon
black pepper
1 cup
Shitaki Mushrooms (or your fav Mushrooms)
1⁄3 pound
bacon (Good quality bacon looks and tastes better so dont be cheap!)

Instructions

Start by Spiraling out the tenderloins(check google if you dont know how to do this)
In a food processor or Magic Bullet add Sundried tomatoes and garlic and a bit of olive oil or the oil from the tomatoes.
Spread mixture over loin.
Sprinkle Choped Mushrooms next then Basil and season with Black Pepper.
Roll up the Tenderloin and Season with Thomson's Pork Rub
Take one peice of the Bacon cut in half and wrap either end (I find if I wrap one end first then as I get close to finishing wrap the other end) After I get the half peice on I start wraping the whole Loin like a candy cane slightly overlapping it. I use a digital Thermometer Cook on the Traeger on smoke for about an hour then turn up to 275 for an hour or untill internal temp reaches 145(the new safe Temp for pork) If you want to crisp up the bacon a bit more turn temp up for a few min. Let sit about 10 min slice a half inch thick and serve with your Fav sides.
I served this with my Coarse Mustard cream sauce.
