Shawarma

ngredients

  • 2lb /1 kg chicken thigh fillets , skinless and boneless (Note 3)

MARINADE

  • 1 large garlic clove , minced (or 2 small cloves)
  • 1 tbsp ground coriander
  • 1 tbsp ground cumin
  • 1 tbsp ground cardamon
  • 1 tsp ground cayenne pepper (reduce to 1/2 tsp to make it not spicy)
  • 2 tsp smoked paprika
  • 2 tsp salt
  • Black pepper
  • 2 tbsp lemon juice
  • 3 tbsp olive oil

Toomeh:

  • 9 cloves garlic
  • 1/2 cup mayonnaise
  • 1/2 cup greek 5% yoghurt
  • juice of one lemon
  • 2 small-med white potatoes
  • S&P to taste
  1. Peel, mince the garlic
  2. Use Mortar Pestle to turn garlic into a paste
  3. boil 2 poatoes, mash them
  4. Mix all ingredients.
  5. Add to food processor and run till you get the texture you want

 

 

For 3 Costco Packs of Boneless Skinless Thighs and 1 Pack of Breasts

  • 20 cloves of garlic, minced
  • 2/3 cup  of Ground Coriander

  • 1/4 cup salt
  • 1/4 cup Black pepper
  • 1 1/3 cup lemon juice
  • 2 cups olive oil
