Baked Round Steak

4 boneless venison, moose or any wild game round steaks, roughly 1 inch thick.
1/2 cup all-purpose flour
2 teaspoon Salt
1 teaspoon freshly ground pepper
1 tablespoon vegetable oil
1 BBQ sauce (Original recipe was brown sugar and Ketchup)
4 green onions cut in half inch lengths.
1 bunch fresh basil
1 cup of stock, either venison or beef stock


1. Preheat oven to 350
2. Preheat cast iron skillet on stovetop on medium-high heat
3. Add enough Vegetable oil to cover bottom of skillet.
1. Mix flour, salt and pepper on a plate.
2. Coat steaks with flour mixture.
3. Place steaks in hot skillet and brown steaks on both sides, 2-3 min per side.
4. I like to add some extra pepper to the steaks as they are searing.
5. Once the steaks are browned on both sides add enough BBQ sauce to coat the steaks nicely.
6. Place the cut up grean onions on top of each steak and sprinkle with freshly cut basil.
7. Add a 12 cup of stock (do this in between the steaks, do not pour on the steaks)
8. Continue heating on cooktop until it starts to boil.
9. As soon as it boils, place the skillet in the pre heated oven. Leave it uncovered for 15min to allow to caramalize the green onions.
10. Once the onions have started to brown (approx 15min, step above), place lid over top or cover with aluminium foil for another 15min.
11. Add the remaining 12 cup of stock and cover with lid for 30 – 60 min.
12. check periodically during this time to ensure there is always stock in the bottom of the pan. At this point you can add water to ensure meat remains moist.
13. Take out of oven and let sit for 5 min with lid on top.


* You can pound your meat with a mallet prior to flouring meat to tenderize it. I normally don’t but it does help on tougher cuts of meats.
* (the original recipy was to put 1 teaspoon of brown sugar on the steaks and then add 1 teaspoon of ketchup per steak – this is good as well I just rather the BBQ sauce

* The final cook time of 30 – 60min is really up to how you like your meat. If you like it really tender, the extra time in the oven allows it to soften up.
