Drunken chipolte and honey BBQ sauce

1 vidalia onion
3 clove of garlic
1/2 can crushed tomatoes
3 tablespoon cider vinegar
1 tablespoon heaping molasses
2/3 cup honey
1 chipolte Tabasco
1 chipotle powder
1 cumin
1 Mustard powder
1 Beer
1 bourbon or rye


1. Sautee the onions and garlic until soft.
2. Add the rest of the ingredients.
3. simmer for 4 hours


* If this is too spicy for the kids, dilute with apple juice and reduce.
* This sauce goes especially well with Niall’s Rub on ribs, smoked over applewood.
