Enchiladas

INGREDIENTS:

2 Lg Flour Tortilla
2 cup Pulled Pork
1 cup diced tomatoes
1 cup Chopped Cilantro
1/2 cup BBQ sauce
1 cup Chopped Red onion
1/2 cup Marble Cheddar cheese
1/2 cup Mozzarella cheese
1/2 cup Monterey jack cheese
1 Sour cream
1 guacamole
1 Salsa
1 Med hot pepper rings

DIRECTIONS:

Chop and cook Red onion in butter
Mix Pulled Pork with BBQ sauce
Chop Cilantro
Dice Tomato
On a baking sheet lay out a large flour tortilla
Across middle put Pulled Pork, Onions,Tomato, and Cilantro
Top with Mozzarella and Monterey jack cheese
Drizzle some more BBQ sauce over
Fold one end over and tuck under pulling mixture tightly, then roll up
Top with Marble cheese
Bake in oven at 350 for 20 min and till cheese is bubbly
Top with Sour cream, Salsa and Guacamole
