Shrimp Scampi

 

A very fast-cooking recipe.  Make sure you have your mis-en-place ready for this!  Very easy, big flavour!

INGREDIENTS:

  • 2 Tablespoons olive oil
  • 4 tablespoons butter
  • 6 large garlic cloves, minced
  • 1 1/4 pounds (600 grams) large shrimp prawns, shelled with tails on or off
  • Salt and fresh ground black pepper to taste
  • 1/4 cup rich chicken broth
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons fresh lemon juice
  • 1/4 cup chopped parsley

DIRECTIONS:

  1. Add the oil and 2 TBS of butter to the pan at a medium heat
  2. Add garlic and sautee for a couple of minutes, should be very fragrant
  3. Add shrimp, season with S&P
  4. Cook for 1 minute, then flip for one minute
  5. Add chicken stock and red pepper flakes, simmer to reduce liquids by half
  6. Add lemon juice, remaining butter and parsley
  7. remove from heat immediately

NOTES:

  • This fed our family of 5 nicely with no leftovers.
  • Costco sells 2 pound bags of shrimp that we use
  • We like with more butter and served over rice
