St. Hurtubise Chicken

INGREDIENTS:

1 Chicken
1 BBQ Candy Chicken Rub (From Eatapedia)

DIRECTIONS:

Clean and rinse chicken, pat dry, then proceed to cut in half, cutting out the spine and discarding.
Apply rub to both sides of chicken halves.
Pre-heat grill to 300 degrees
Cook chicken on indirect heat for two hours, one hour with the open side down, flipping for a half hour, then flipping again for the last half hour.

NOTES:

This method turns out some very moist and tasty chicken and has been named after one of the true jerks of the BBQ world.
