Ingredients

  • 3 tablespoon Butter
  • 1 1/4 cup heavy/whipping cream
  • 3/4 half u0026 half cream
  • 1/3 cup grated Romano cheese
  • 1/3 cup grated parmesan cheese
  • 1/8 teaspoon ground nutmeg
  • 1 dash salt and pepper to taste
  • 2 egg yolk (egg)

Method

  1. Melt the butter in a pan over med-low
  2. Add the creams, whisk constantly over med, (warm it up but do not boil)
  3. Add the cheeses and seasonings, continue to whisk
  4. Once the cheeses have melted, add the egg yolks
  5. Gently simmer over low for 3 – 5 minutes.

Notes

  • Garnish with fresh parsley and more Parmesan cheese
  • I add leftover BBQ meat to my sauce, the smoke imparts a wonderful flavour!
  • The sauce might seem a little thin at first, but once it’s poured on the pasta and you let it sit for a minute, it’s quite nice
  • For a thicker sauce, use all whipping cream instead of using half u0026amp; half
