Chimichurri Sauce

Bright Argentinian chimichurri made with parsley, cilantro, garlic and olive oil — great over grilled meats.

Ingredients

  • 1.5 cups Italian (flat-leaf) parsley
  • 0.5 cup cilantro
  • 4 cloves garlic minced
  • 0.75 cup olive oil
  • 1 tsp salt
  • 2 tsp ground cumin
  • 2 tbsp dried oregano
  • 3 tbsp sherry vinegar
  • 1 squirt sriracha sauce to taste

Method

  1. Place all ingredients in a food processor.
  2. Pulse until it forms a sauce but not so much that it becomes a paste; texture should be loose and slightly chunky.
  3. Transfer to a jar and refrigerate for at least 2 hours before using to let flavors meld. Keeps refrigerated for up to 1 week.
