A creamy blue cheese compound butter with roasted garlic and Worcestershire, spooned over grilled steak and briefly broiled until melted and bubbly.

Ingredients

  • 1 stick butter, soft
  • 4 ounce good blue cheese 4 to 5 oz
  • 2 clove roasted garlic 2 to 3 cloves
  • 2 dash Worcestershire sauce to taste (a couple of splashes)
  • 1 pinch thyme
  • 1 pinch kosher or sea salt
  • freshly ground black pepper to taste

Method

  1. In a bowl, mash together the soft butter, crumbled blue cheese, roasted garlic, Worcestershire sauce, thyme, salt, and freshly ground pepper until well combined.
  2. Spoon a couple of dollops of the blue butter onto steaks grilled to your liking.
  3. Place the steaks under a broiler for 1–2 minutes, until the butter mixture is melted and bubbly. Serve immediately.
