Ingredients
1cupsalted butter
2limeslime zestzest of 2 limes, chopped
1.5limeslime juicejuice of 1½ limes
6pieceschipotle peppers (from can)seeds removed
adobo sauceremaining sauce from the can
Method
In a bowl, combine the butter, lime zest, lime juice, chipotle peppers and enough adobo sauce to taste. Mix thoroughly until smooth and evenly combined.
Shape or cover the butter and chill in the refrigerator until firm, about 1 hour.
Bring to room temperature before using so it’s spreadable. Best applied with a pastry brush for corn on the cob or spread on warm bread.
Great on corn-on-the-cob; adjust chipotle and adobo sauce to control heat. Store covered in refrigerator for up to 2 weeks or freeze for longer storage.
