Stuffed Pork Tenderloin

Ingredients

  • 1 poundpork tenderloin
Marinade:
  • 1/2 cup red wine
  • 1/2 cup Brown sugar
  • 1/4 cup red wine vinegar
  • 1/4 cup ketchup
  • 1/4 cup hoisin sauce
  • 3 clove garlic, minced
  • 2 tablespoon Soya sauce
  • 1 teaspoon Chinese Five Spice powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground pepper
Stuffing:
  • 4 cup crumbled cornbread (STUFFING)
  • 1 onion, (large, finely minced and sauteed in butter)
  • 1 egg
  • 1/4 cup chopped chives (chopped)
  • 1 teaspoon sage
  • 1 dash salt and pepper to taste
  • 5 tablespoons chicken stock (enough to make stuffing easy to spread.)

Method

  1. Mix all marinade ingredients
  2. Soak tenderloin overnight, in the fridge
  3. Filet out the tenderloin
  4. Spread the stuffing all over the tenderloin
  5. Roll it back up
  6. Tie it up and bake at 400 degrees for ~35 minutes
