Stuffed Pork Tenderloin

Ingredients
- 1 poundpork tenderloin
Marinade:
- 1/2 cup red wine
- 1/2 cup Brown sugar
- 1/4 cup red wine vinegar
- 1/4 cup ketchup
- 1/4 cup hoisin sauce
- 3 clove garlic, minced
- 2 tablespoon Soya sauce
- 1 teaspoon Chinese Five Spice powder
- 1 teaspoon ground ginger
- 1/2 teaspoon sea salt
- 1/2 teaspoon ground pepper
Stuffing:
- 4 cup crumbled cornbread (STUFFING)
- 1 onion, (large, finely minced and sauteed in butter)
- 1 egg
- 1/4 cup chopped chives (chopped)
- 1 teaspoon sage
- 1 dash salt and pepper to taste
- 5 tablespoons chicken stock (enough to make stuffing easy to spread.)
Method
- Mix all marinade ingredients
- Soak tenderloin overnight, in the fridge
- Filet out the tenderloin
- Spread the stuffing all over the tenderloin
- Roll it back up
- Tie it up and bake at 400 degrees for ~35 minutes
