Quick garlic butter shrimp sautéed with lemon, parsley and a touch of red pepper for a fast weeknight seafood dinner.

Ingredients

  • 2 Tablespoons olive oil
  • 4 tablespoons butter
  • 6 cloves garlic minced
  • 1 1/4 pounds large shrimp (prawns) about 600 grams, shelled with tails on or off
  • salt and fresh ground black pepper to taste
  • 1/4 cup rich chicken broth
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons fresh lemon juice
  • 1/4 cup chopped parsley

Method

  1. Heat olive oil and 2 tablespoons butter in a pan over medium heat.
  2. Add minced garlic and sauté for a couple of minutes until very fragrant.
  3. Add the shrimp and season with salt and freshly ground black pepper.
  4. Cook shrimp about 1 minute on the first side, then flip and cook 1 minute on the other side.
  5. Add chicken broth and crushed red pepper flakes; simmer until liquids reduce by about half.
  6. Stir in lemon juice, the remaining butter, and chopped parsley.
  7. Remove from heat immediately and serve (optionally over rice).

Notes

This fed our family of 5 nicely with no leftovers. Costco sells 2 pound bags of shrimp that we use. We like it with more butter and served over rice.
