Shrimp Scampi

Garlic Butter Shrimp

Ingredients
- 2 Tablespoons olive oil
- 4 tablespoons butter
- 6 cloves garlic minced
- 1 1/4 pounds large shrimp (prawns) about 600 grams, shelled with tails on or off
- salt and fresh ground black pepper to taste
- 1/4 cup rich chicken broth
- 1/4 teaspoon crushed red pepper flakes
- 2 tablespoons fresh lemon juice
- 1/4 cup chopped parsley
Method
- Heat olive oil and 2 tablespoons butter in a pan over medium heat.
- Add minced garlic and sauté for a couple of minutes until very fragrant.
- Add the shrimp and season with salt and freshly ground black pepper.
- Cook shrimp about 1 minute on the first side, then flip and cook 1 minute on the other side.
- Add chicken broth and crushed red pepper flakes; simmer until liquids reduce by about half.
- Stir in lemon juice, the remaining butter, and chopped parsley.
- Remove from heat immediately and serve (optionally over rice).

Notes
This fed our family of 5 nicely with no leftovers. Costco sells 2 pound bags of shrimp that we use. We like it with more butter and served over rice.
