3 tablespoon Butter
1 1/4 cup heavy/whipping cream
3/4 half & half cream
1/3 cup grated Romano cheese
1/3 cup grated parmesan cheese
1/8 teaspoon ground nutmeg
1 dash salt and pepper to taste
2 egg yolk (egg)
Directions
- Melt the butter in a pan over med-low
- Add the creams, whisk constantly over med, (warm it up but do not boil)
- Add the cheeses and seasonings, continue to whisk
- Once the cheeses have melted, add the egg yolks
- Gently simmer over low for 3 – 5 minutes.
Notes
- Garnish with fresh parsley and more Parmesan cheese
- I add leftover BBQ meat to my sauce, the smoke imparts a wonderful flavour!
- The sauce might seem a little thin at first, but once it’s poured on the pasta and you let it sit for a minute, it’s quite nice
- For a thicker sauce, use all whipping cream instead of using half & half
