Ingredients
- 4 eggs eggs
- 3 1/2 cups milk 1% milk used
- 1 1/2 tsp vanilla extract
- 1 cup vegetable oil
- 4 cups all-purpose flour
- 2 tbsp sugar
- 8 tsp baking powder
- 1/2 tsp salt
Method
- Beat the eggs with a mixer until creamy.
- Add the milk, vanilla and vegetable oil to the eggs and combine.
- In a separate bowl, whisk together the flour, sugar, baking powder and salt.
- Gradually add the dry ingredients to the wet mixture, mixing slowly until smooth and well combined.
- Preheat your waffle iron according to manufacturer directions. Pour batter into the preheated waffle iron and cook until the waffles are golden and crisp on the outside.
- Remove waffles and serve warm, or cool and freeze leftovers for reheating later.

I have a Cuisinart “Breakfast Central” Waffle Maker and it spat these little beauties out in no time! Nice big, crunchy on the outside, fluffy and light on the inside. This recipe fed 6 kids and 2 adults and still had plenty for the freezer.
