A simple, quick paella-style rice dish using minute rice, vegetables, saffron and optional seafood or chicken for a fast weeknight meal.

Ingredients

  • 8 cups Minute rice
  • chicken soup base for boiling water
  • 1 large onion sliced or diced
  • 2 carrots cut into bite-size pieces
  • 2 stalks celery cut into bite-size pieces
  • 2 tbsp vegetable oil for sautéing
  • 1 cup peas frozen or fresh
  • 1 cup corn frozen or fresh
  • shrimp optional; fried or sautéed with garlic and margarine
  • scallops optional; baked, fried or grilled
  • mussels optional; steamed
  • lobster optional; small piece
  • chicken, bite-size optional; flour-dusted and fried in oil
  • black pepper to taste
  • dried chili peppers to taste
  • garlic powder to taste
  • basil to taste
  • oregano to taste
  • parsley for sprinkling or garnish (or use green onions/chives)
  • pinch saffron for color and flavor

Method

  1. Bring water to a boil and add chicken soup base and saffron. Cook the minute rice according to package directions; set cooked rice aside.
  2. Cut carrots and celery into bite-size pieces and boil or microwave until tender; drain and set aside.
  3. Slice the onion and sauté in vegetable oil until translucent; remove and set aside.
  4. If using seafood or chicken, prepare separately: fry or sauté shrimp with garlic, cook scallops or mussels as desired, or fry flour-dusted chicken pieces. Set cooked proteins aside.
  5. In a large serving bowl, combine the cooked rice, cooked vegetables, sautéed onion, peas, corn, pepper, dried chili peppers, garlic powder, basil and oregano. Mix thoroughly to distribute flavors.
  6. Add optional cooked proteins on top or mix in. Sprinkle parsley or chopped green onions/chives over the paella. Adjust salt and seasonings to taste and serve warm.
  7. Leftovers suggestion: add soy sauce and briefly pan-fry to make fried rice.

Notes

NOTE: Add soy sauce to leftovers for fried rice. Optional seafood or chicken can be added based on preference.
