Ingredients

  • 400 grams uncooked basmati rice
  • 600 ml cold water about 1.5:1 water to rice ratio
  • 4 pods green cardamom pods pierce pods before adding
  • 1 star anise
  • salt and pepper to taste

Method

  1. Thoroughly rinse the rice 3 times in ice-cold water until the rinse water runs clear.
  2. Place the rinsed rice in a pot.
  3. Add 600 ml cold water to the pot (about a 1.5:1 water-to-rice ratio).
  4. Pierce the cardamom pods with a fork to release flavor, then add them and the star anise to the pot.
  5. Season with salt and pepper to taste.
  6. Cover the pot and bring to a rapid boil over high heat, then immediately reduce the heat to a simmer.
  7. Simmer gently for 10 minutes without removing the lid.
  8. Turn off the heat, remove the lid, and fish out the star anise and cardamom pods.
  9. Fluff the rice with a fork and serve hot.

Notes

Use a 1.5:1 water-to-rice ratio for this method. Rinsing removes excess starch for fluffier grains.
