Cucumber Salad

 

We had this last year along with a giant late of Schnitzel at a local restaurant.  It provided such a lovely balance that I had to find a recipe.  This one came from Lemon Tree Dwelling and I really only added pepper to this awesome recipe.

INGREDIENTS:

  • 3 Cups of thinly sliced peeled cucumbers
  • 1 Cup thinly sliced red onion
  • 1/2 Cup Sour Cream
  • 1 TBSP White Vinegar
  • 1 TBSP Minced Fresh Dill
  • 1 TSP White Sugar
  • 1/2 TSP Salt
  • 1/4 TSP Black Pepper
  • 1/4 TSP Granulated Garlic

DIRECTIONS:

  1. In a medium mixing bowl stir together sour cream, vinegar, dill, sugar, salt, pepper and garlic powder.
  2. Add cucumbers and red onion; toss to coat.
  3. Cover and refrigerate 2 or more hours.

NOTES:

I let this warm up just a wee bit because those cold cukes are hard on my old man teeth!
