Chipotle Lime Butter

Ingredients
- 1 cup salted butter
- 2 limes lime zest zest of 2 limes, chopped
- 1.5 limes lime juice juice of 1½ limes
- 6 pieces chipotle peppers (from can) seeds removed
- adobo sauce remaining sauce from the can
Method
- In a bowl, combine the butter, lime zest, lime juice, chipotle peppers and enough adobo sauce to taste. Mix thoroughly until smooth and evenly combined.
- Shape or cover the butter and chill in the refrigerator until firm, about 1 hour.
- Bring to room temperature before using so it’s spreadable. Best applied with a pastry brush for corn on the cob or spread on warm bread.

Notes
Great on corn-on-the-cob; adjust chipotle and adobo sauce to control heat. Store covered in refrigerator for up to 2 weeks or freeze for longer storage.
