A zesty, smoky compound butter made with chipotles, lime zest and lime juice — great for corn on the cob or as a flavorful spread.

Ingredients

  • 1 cup salted butter
  • 2 limes lime zest zest of 2 limes, chopped
  • 1.5 limes lime juice juice of 1½ limes
  • 6 pieces chipotle peppers (from can) seeds removed
  • adobo sauce remaining sauce from the can

Method

  1. In a bowl, combine the butter, lime zest, lime juice, chipotle peppers and enough adobo sauce to taste. Mix thoroughly until smooth and evenly combined.
  2. Shape or cover the butter and chill in the refrigerator until firm, about 1 hour.
  3. Bring to room temperature before using so it’s spreadable. Best applied with a pastry brush for corn on the cob or spread on warm bread.

Notes
