French Onion Soup

Ingredients

  • 5 large onions, I use Vidalia

  • 2 Tablespoon of butter

  • 8 cups rich beef stock

  • 1/4 cup red wine

  • 4 Bay leaves

  • 3 Sprigs of fresh thyme

  • Crouton for the top (I use toasted baguette)

  • Lots of Swiss cheese (gruyere is amazing)

Directions

  • Peel and slice your onions
  • In a large pot with butter, on LOW, slowly reduce your onions (2 hours+)
  • Make sure they are nice and caramelized, take your time
  • Deglaze pot with red wine
  • Add Stock and herbs
  • Cover and simmer one hour
  • Turn on oven broiler to High
  • Ladle into Soup Bowls
  • Place crouton on top and load up with cheese.
  • Add more cheese
  • Into the broiler till the cheese is melted and bubbling
  • Let sit for 10 minutes
  • Garnish with fresh thyme or chives
